What Colour Should Smoke Be When Cooking with Hardwood?

Smoke from a smoker.

The ideal smoke is thin, almost invisible, with a pale blue tint. This is the sign of clean, efficient hardwood combustion.

There’s Good Smoke and There’s Bad Smoke

The smoke coming from your smoker tells you a story. Get to know what it means and you can correct potential issues before they affect your food.

White, billowy smoke means the wood is still igniting or the fire is oxygen‑starved.

Yellow or brown smoke means something is burning dirty — sap, moisture, or residue.

Blue smoke is the sweet spot where the fire is stable and the flavour is pure.

Always remember that blue smoke is the quiet confidence of a well‑run fire. Get to know the smoke signs your smoking is sending and you will always be ahead of the game.
